Overnight oatmeal is a great way to have a healthy breakfast without doing any cooking!
I got this idea from Ree Drummond, The Pioneer Woman. While I love her original recipe, I had to scale it back just a little. I replaced the sugar with honey and swapped out some of the ingredients.
I love waking up knowing breakfast is already done! This also makes for the perfect meal on the go.
- 1 cup old-fashioned oats
- 1-2 cups whole milk, plus more if needed
- 1/4 cup chopped dates
- 1 tablespoon vanilla extract
- Pinch of kosher salt
- 1 small apple, chopped
- 2 tablespoons honey
- 1 tsp cinnamon
- In a bowl, mix together the oats, milk, dates, honey, vanilla, salt, cinnamon and apple. Cover and refrigerate overnight.
- The next morning give the mixture a stir and add a bit more milk if it has become too thick. Serve with fresh berries on top.
